Aqua S Regent Place

When your Instagram feed is filled with pictures of soft serve, and its origin is just one place, well, it’s time to make tracks to Aqua S located in Regent Place in the middle of Sydney CBD. Look for the neon yellow signs of Regent Place (just north of the Event Cinemas precinct on George Street), walk in, and look for the lines spilling out the front, and it will most likely be Aqua S.

Aqua S keeps it simple with 3 flavours of soft serve. The mainstay of the menu is the blue sea salt flavour. There’s a rotation of flavours and on our visit we sample both the tomato and melon flavours. You can blend in the sea salt flavour with any of the other base flavours you choose.

First off is the collaboration between Zomato Australia and Aqua S with their tomato flavour. Here, it is combined with sea salt to produce a pretty cone of blue and rose hues. If you enjoy bloody marys or V8 juice, you will enjoy the tomato flavour. It’s creamy and savoury, and combined with the sea salt flavour, it works really well. I have to admit it took a couple of licks of the combo to get into it, but give it time and the grows on you. There’s a tinge of sweetness that comes through, but it’s as conservative on the sweetness scale as a soft serve can get. There’s a bevvy of sweet accoutrements to choose from, including giant marshmallows, which were just amazing – soft in the middle, with a candied, almost charred, outer. Yum! Clouds of fairy floss can encircle your cone, if that is your want. There are palmiers, mochi, and egg rolls to enrich your soft serve with textures and extra taste sensations. The options are endless with the venerable soft serve here at Aqua S.

On day two, I returned to try the 2nd of the flavours on the fortnightly rotation. I decided to go with a melon flavour without any extras. It was just me and the soft serve. The melon was the fruitier flavour of the two soft serves I sampled and tasted of honeydew. It was a familiar flavour but in a soft serve, totally original.

I like where Aqua S is going with their flavours. I think to some extent it will polarise, but I think it’s that risk-taking with flavours combined with a 14-day rotation of flavours, which will have devotees coming back. I know I will definitely be back to try their next flavour adventure, so check back here often for our rolling reviews as each new soft serve makes their debut at Aqua S.
