When I was growing up as a typical Aussie kid, lamingtons were so common that they could have been seen as one of the main food groups. I ate so many’ from bake sales, the school canteen, and sneaking them from my Nanny’s biscuit tin, that I doubt I would have survived without them! Fast forward to the present day and lamingtons, like most of our childhood favourites, have undergone a gourmet transformation. Now the humble “lamo” comes in exotic flavours, festooned with any number of toppings and coatings. Testament to this lamington evolution are the homemade creations at LusciousKiki Cakes in Brookvale.
LusciousKiki Cakes is well known for a wide range of super yummy treats, but on this lazy Sunday afternoon, we’re targeting owner Kiran’s lamington selection. First lamington in our sights is the aptly named Sweet Nothings. An impossibly light and airy sponge is the stage for ingredients like hazelnut, caramel, white chocolate, and of course, tender, sweet coconut. It’s a beauty to behold and I could eat nothing else all day!
How to follow up such a winner? Karin’s got a devilish one-two punch in the form of the Lime Slice lamington. Once again, insanely light and moist sponge comes to life with the infusion of lime and a dusting of coconut that works together to transport you to a tropical lamington paradise. With a side of warm and spicy chai tea, who needs to bother with the flight to Fiji, when you can just close your eyes and sip and sit with this magical treat.
Our quick pop-in visit to LusciousKiki Cakes has left us needing to explore the rest of Karin’s creations, so we’ll soon be back to Brookvale with a lot more time to sample our way through her baked treasures. I don’t have them often but I have a major weakness for Lamingtons! The Sweet Nothings sounds right up my alley! Shame I don’t get to Brookvale too often 🙁
